Semua tekniknya sudah kupraktekkan, mulai dari cara mengocok yang kental berjejak, mengaduk terigu dengan teknik aduk balik dan sebagainya. Semuanya berakhir dengan hasil sama : bantet.&lt;br /&gt;&lt;br /&gt;Saking keselnya karena selalu tidak berhasil, kadang aku buang, kadang aku bagikan atau aku diamkan sampai berjamur, terus ya dibuang juga. Tapi aku tetep pengin kue yang aku buat gak pakai bahan additif. Lha jaman dulu aja kue seperti itu bisa kok diciptakan. &lt;br /&gt;&lt;br /&gt;Sempat juga berhasil dengan menggunakan oven besar, tapi pakai kecelakaan sedikit luka bakar di muka dan tangan suamiku ketika menyalakan api bawah. Wah jadi makin males deh bikin sponge cake. Cake yang berhasil ini malah gak aku pakai untuk dihias sama sekali, malah aku jadiin Balls of Joy aja... hehehe.. gak tega makannya...&lt;br /&gt;&lt;br /&gt;Balls of Joy :&lt;br /&gt;&lt;br /&gt;1 bagian kue&lt;br /&gt;1 resep ganache perbandingan 1:1. &lt;br /&gt;&lt;br /&gt;Caranya :&lt;br /&gt;&lt;br /&gt;1. Hancurkan kue dengan menggunakan pisau untuk membuat pie.&lt;br /&gt;2. Campurkan dengan ganache sedikit demi sedikit supaya tercampur rata.&lt;br /&gt;3. Bulatkan adonan dengan menggunakan sendok ukuran.&lt;br /&gt;4. Dinginkan di kulkas. Keluarkan lalu siram dengan sisa ganache atau DCC leleh.&lt;br /&gt;5. Hasil akhirnya memang tidak mengecewakan. Apalagi kita bisa bebas menambahkan isiannya sesuai stok yang ada. Tergantung kreativitas dan kesukaan. Yang paling sering aku buat seperti di foto dengan komposisi isian: havermout, kacang dan chocolate chips. &lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Chocolate Chips Cookies&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;Bahan : &lt;br /&gt;1/4 cup mentega&lt;br /&gt;1/2 cup brown sugar&lt;br /&gt;1/2 cup gula castor&lt;br /&gt;1 butir telur&lt;br /&gt;1/2 sdt vanila extract&lt;br /&gt;1 cup + 2 sdm tepung terigu&lt;br /&gt;1/2 sdt garam &lt;em&gt;(kalau pakai mentega asin, tidak perlu lagi)&lt;/em&gt;&lt;br /&gt;1/2 sdt baking powder&lt;br /&gt;1/2 cup aneka kacang yang sudah disangrai dan dicincang kasar&lt;br /&gt;1/2 cup chocolate chips&lt;br /&gt;1/2 cup kismis&lt;br /&gt;&lt;br /&gt;Caranya :&lt;br /&gt;&lt;br /&gt;1. Nyalakan oven di suhu 180 derajat Celcius&lt;br /&gt;2. Kocok mentega sampai lembut, masukkan brown sugar dan gula castor. kocok sampai rata.&lt;br /&gt;3. Masukkan telur dan vanila extract. Aduk rata.&lt;br /&gt;4. Masukkan ayakan tepung terigu, garam dan baking powder. Aduk perlahan dengan sendok kayu.&lt;br /&gt;5. Masukkan isian (choc chips, kacang sangrai cincang dan kismis).&lt;br /&gt;6. Bentuk bulatan dengan menggunakan 2 sendok atau sendok ukuran. Taruh di atas loyang dan beri jarak. Loyangnya jangan lupa diolesi dengan mentega. &lt;br /&gt;7. Panggang selama 10 menit. Kuncinya di sini. Jangan memanggang terlalu lama karena kue akan keras. Walaupun atasnya masih lunak, keluarkan dari oven dan diamkan sejenak hingga benar-benar matang. Ternyata enak juga. Tidak seret karena kekurangan bahan cairan atau karena kebanyakan pemakaian tepung seperti kebanyakan resep yang aku temuin. Komposisi di sini aku kurangin pemakaian baking powder supaya hasil akhir tidak terlalu menjulang tinggi seperti muffin dan penambahan coklat batang menjadi 125 gr.&lt;br /&gt;&lt;br /&gt;Cake Coklat Trio&lt;br /&gt;Sumber : Buklet Saji Seri 3 Cake Berhias &lt;br /&gt;&lt;br /&gt;Bahan :&lt;br /&gt;&lt;br /&gt;250 gr margarin&lt;br /&gt;200 gr gula pasir halus&lt;br /&gt;100 gr coklat masak pekat, dilelehkan (aku : 125 gr)&lt;br /&gt;5 butir telur&lt;br /&gt;250 gr tepung terigu protein sedang&lt;br /&gt;2 sendok teh baking powder (aku pakai 1 sdt)&lt;br /&gt;30 gr coklat bubuk dan 75 ml susu cair, dilarutkan&lt;br /&gt;75 gr keping coklat&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Cara Membuat :&lt;br /&gt;&lt;br /&gt;1. Kocok margarin dan gula sampai lembut. Masukkan coklat leleh. Aduk rata&lt;br /&gt;2. Tambahkan telur satu per satu dan kocok hingga benar-benar tercampur rata.&lt;br /&gt;3. Masukkan sebagian tepung terigu yang sudah diayak bersama baking powder, bergantian dengan susu coklat cair dengan kecepatan rendah. &lt;br /&gt;4. Masukkan coklat keping. Aduk rata.&lt;br /&gt;5. Tuang ke dalam loyang muffin yang sudah diberi alas cup. Isi sampai 2/3 penuh. &lt;br /&gt;6. Kuenya kok lembek gak kayak bolu? Wah salah besar kalo brownies seperti bolu. Makanya jangan pernah sekali kali menambahkan baking powder atau sejenis lainnya di dalam bahan kue. Karena yang namanya brownies ya bantet tet.  &lt;br /&gt;&lt;br /&gt;Brownies ini sudah pernah jadi mata pencahariannku sejak tahun 1997. &lt;br /&gt;Dulu resep brownies pertama kali yang aku dapet pakai campuran bubuk coklat dan gula yang dicampur jadi satu. &lt;br /&gt;Dulu juga belum ada loyang standard seperti sekarang. &lt;br /&gt;Karena sering uji coba, bubuk coklat aku ganti dengan coklat blok yang takaran kepahitannya sama dengan campuran bubuk coklat dan gula tadi.  &lt;br /&gt;Hasilnya seperti resep ini.&lt;br /&gt;&lt;br /&gt;Fudgy Brownies&lt;br /&gt;Sumber : http://bengkelkue.blogspot.com&lt;br /&gt;&lt;br /&gt;Bahan :&lt;br /&gt;&lt;br /&gt;250 gr coklat batang&lt;br /&gt;3 sdm makan mentega&lt;br /&gt;125 gr gula&lt;br /&gt;3 butir telur&lt;br /&gt;100 gr tepung terigu&lt;br /&gt;10 gr coklat bubuk&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Cara Membuat:&lt;br /&gt;&lt;br /&gt;1. Aduk rata.&lt;br /&gt;4. Masukkan ayakan tepung terigu dan coklat bubuk. Aduk rata. &lt;br /&gt;5. Tuang ke loyang yang sudah dioles mentega dan ditaburi tepung&lt;br /&gt;6. Panggang selama 40 menit dengan suhu 175 derajat Celcius&lt;br /&gt;7. Aku pakai wortel besar impor karena rasanya lebih manis dan tidak langu (maaf ya para petani lokal). Ada penambahan juga di komposisi gula, sebagian aku ganti dengan gula palm supaya menambah aroma makin kuat. Selebihnya proses seperti biasa. Kocok telur, gula, garam hingga kental dengan kecepatan tinggi. Masukkan emulsifier, kocok terus hingga kental dan meninggalkan jejak.&lt;br /&gt;2. ayak bahan kering, kemudian masukkan ke dalam adonan dengan kecepatan rendah hingga tercampur rata.&lt;br /&gt;3. Masukkan wortel parut, aduk hingga rata.&lt;br /&gt;4. Masukkan minyak perlahan ke dalam adonan hingga tercampur rata.&lt;br /&gt;5. Tuang ke dalam loyang bundar 20-22 cm yang telah dialasi kertas roti.&lt;br /&gt;6. Aku skip bahan ini. &lt;br /&gt;Yang lainnya tetep sesuai takaran dan anjuran.&lt;br /&gt;&lt;br /&gt;Sebenernya banyak yang bisa dimodifikasi dari resep ini, seperti penambahan bubuk 1 sdt kayumanis akan menambah rasa dan aroma yang semakin spicy... mmmm ... can't wait until Takbiran...&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Peanut Butter Cookies&lt;/strong&gt;&lt;em&gt;Source : Vania&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;3/4 cup butter suhu ruang&lt;br /&gt;1/2 cup selai kacang&lt;br /&gt;1 cup gula pasir&lt;br /&gt;1/2 cup brown sugar &lt;br /&gt;1 sdt baking powder&lt;br /&gt;1/2 sdt soda kue&lt;br /&gt;2 butir telur utuh&lt;br /&gt;1 sdt vanilla&lt;br /&gt;1 1/4 cup terigu&lt;br /&gt;1 1/2 cup oatmeal&lt;br /&gt;1/2 cup kacang mete / tanah cincang&lt;br /&gt;1/2 cup choco chips&lt;br /&gt;&lt;br /&gt;Cara Membuat :&lt;br /&gt;&lt;br /&gt;1. Panaskan oven&lt;br /&gt;2. Campur butter  dan selai kacang sampai tercampur rata. Jangan dikocok terlalu lama.&lt;br /&gt;3. masukkan gula pasir, brown sugar, baking powder dan baking soda sampai tercampur rata&lt;br /&gt;4. masukkan terigu ayak. Aduk dengan menggunakan sendok kayu.&lt;br /&gt;5. masukkan bahan tambahan : oatmeal, kacang tanah / mente dan choco chips. Aduk sampai rata.&lt;br /&gt;6. cetak dengan menggunakan 2 sendok kecil. Tata di loyang yang sudah diberi sedikit mentega. Beri jarak.&lt;br /&gt;7. Panggang selama 10-12 menit dengan suhu 150 C. Jika bawahnya sudah kecoklatan, keluarkan dari oven. &lt;br /&gt;8. Tapi kita bisa lho bikin sendiri dengan disisipkan sayuran, semisal wortel atau kacang polong  Penambahan keju cheddar akan semakin memperkaya rasa..&lt;br /&gt;Apalagi kalau dibentuk lucu sesuai kesukaan mereka... mmm .. sudah sehat, enak dan tentunya memikat..&lt;br /&gt;&lt;br /&gt;Yuu dicoba...&lt;br /&gt;&lt;br /&gt;RESEP DASAR NUGGET&lt;br /&gt;Sumber : Majalah Selera 1997&lt;br /&gt;&lt;br /&gt;Bahan&lt;br /&gt;300 gr daging ayam cincang/udang kupas/cumi-cumi kupas/daging kakap giling&lt;br /&gt;2 siung bawang putih cincang halus&lt;br /&gt;1 siung bawang Bombay cincang halus&lt;br /&gt;½ sdt merica halus&lt;br /&gt;½ sdt garam &lt;br /&gt;2 butir telur&lt;br /&gt;3 lembar roti tawar tanpa kulit  ⎤ direndam dengan susu sampai hancur&lt;br /&gt;100 ml susu    ⎦  &lt;br /&gt;100 gr wortel serut&lt;br /&gt;50 gr keju cheddar parut&lt;br /&gt;&lt;br /&gt;Pelapis :&lt;br /&gt;Tepung bumbu serbaguna siap pakai&lt;br /&gt;2 butir telur kocok&lt;br /&gt;150 gr tepung roti&lt;br /&gt;&lt;br /&gt;Cara membuat :&lt;br /&gt;1. campur daging dengan bawang putih, bawang Bombay, lada, garam. Aduk rata&lt;br /&gt;2. Masukkan putih telur dan campuran roti dan susu&lt;br /&gt;3. Tuang di loyang, kukus selama 20 menit&lt;br /&gt;4. Potong nugget atau cetak sesuai selera. &lt;br /&gt;5. Gulingkan nugget pada tepung bumbu , gulingkan di telur kocok lalu ke tepung roti. &lt;br /&gt;6. Tidak hambar ketika merasakan ayam yang direbus dengan air biasa. Sekilas mirip opor ayam, bedanya ketika akan disajikan, ayam perlu dipanggang di atas bara api sedikit untuk memberikan efek smoky.&lt;br /&gt;&lt;br /&gt;Sajikan dengan sisa bumbu yang masih ada, taburi dengan bawang goreng. Trus disiram ganache cair supaya bisa keliatan rapih. Baru atasnya dihias. Pemberian ganache cair ini solusi jitu untuk memberikan effek rapih di atas kue. Bikinnya gampang, dan bisa melibatkan anak2 untuk membuatnya. &lt;br /&gt;&lt;br /&gt;Bahan :&lt;br /&gt;&lt;br /&gt;150 gr corn flake &lt;br /&gt;250 gr dark cooking chocolate - tim&lt;br /&gt;1 sdm butter&lt;br /&gt;mangkuk kertas ukuran kecil&lt;br /&gt;sprinkes warna warni (optional)&lt;br /&gt;&lt;br /&gt;Cara buatnya :&lt;br /&gt;&lt;br /&gt;Tim coklat di dalam wadah yang cukup besar untuk memuat corn flake. Kalau sudah leleh semua, masukkan butter. &lt;br /&gt;Kemudian masukkan corn flake. Aduk rata sampai tersalut semuanya. &lt;br /&gt;Tuang adonan sesendok ke dalam mangkuk kertas. Hias dengan sprinkles. &lt;br /&gt;Tunggu hingga dingin dan mengeras. Panaskan sisa minyak bekas menggoreng ikan, tumis bumbu halus sampai harum, masukkan nasi, daging ikan jambal, tuang santan. Aduk sampai santan terserap. Matikan api. &lt;br /&gt;2. Siapkan loyang oven kecil, semir margarin dan taburi terigu.&lt;br /&gt;&lt;br /&gt; 2. Kocok telur, gula palem, dan gula pasir hingga kental dan mengembang.&lt;br /&gt;&lt;br /&gt; 3. (tantenya kok gak hafal ya ultah keponakan! he he he) &lt;br /&gt;Sarah : 22 November&lt;br /&gt;Tantenya ; ya udah nanti kita bikin pas ultah kamu ya!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Nah, udah janji kan? Kudu ditepati dong... ntar ditagih mulu...&lt;br /&gt;&lt;br /&gt;Pertama-tama, kita buat cakenya dulu... nii kayak gini... pakai resep butter cake aja supaya gampang... &lt;br /&gt;&lt;br /&gt;Sebenarnya ada banyak resep yang bisa dipakai. Brownies, carrot cake, banana cake, dll. Tapi yang harus diperhatikan adalah hasil akhir adonannya harus padat. Yah dengan kata lain, pakai resep yang komposisi terigu cukup banyak ketimbang telur dan komponen cair lainnya. Ini supaya adonan di dalam cupnya tidak kopong / kosong. Nanti ketika digenggam gak ada isinya. &lt;br /&gt;&lt;br /&gt;Untuk topingnya bisa disesuaikan dengan adonan yang dipakai. Kali ini aku pakai resep butter coklat 2 telur. Hasilnya bisa dapet 15 cups. &lt;br /&gt;&lt;br /&gt;Oh ya jangan lupa pakai cup yang sesuai dengan ukuran loyangnya ya. Kebon Sirih, tidak jauh dari Gedung Sarinah Thamrin... ketemu dengan penjaja ketan bakar ini....Mana lagi laper karena pas jam makan siang, panas pula... eh ngliat makanan satu ini langsung aja kalap mode on. Secara tukang makanan ini sudah jarang ditemuin... gak banyak yang berjualan sekarang ini. Kalaupun ada, biasanya mereka menjual di warung kopi. Ya, makanan ini memang enaknya sambil nyeruput segelas kopi hitam. &lt;br /&gt;&lt;br /&gt;Dulu, ketika masih tinggal di daerah Matraman, ketika warung tenda makanan berjejer di depan pagar rumah kami, salah satunya ada warung kopi yang menjual ketan bakar ini. Style nya masih sama : ketan bakar dibumbui kacang dan gula pasir. Waktu itu yang dimakan cuma kacang dan gula pasirnya doang. Ketannya dikasih ke pembantu... he he he... &lt;br /&gt;&lt;br /&gt;Ketan bakar ini hampir sama dengan gemblong atau ketan yang dimakan bersama tape ragi. Cuma beda diproses pematangannya. Yaitu beras ketan putih yang sudah dikukus kemudian dihaluskan bersama dengan parutan kelapa muda. Dibentuk sesuai dengan yang dikehendaki. Kalau gemblong dicelup di gula merah, sementara ada juga ketan yang dimakan bersama ketan ragi (makanan ini biasanya ditemukan ketika Hari Raya Idul Fitri), nah si ketan bakar ini ya cuma dibakar. Cuma gak nahan deh manggangnya... 1 jam! Tapi kali ini pakai cream cheese...&lt;br /&gt;&lt;br /&gt;Brownies ini sudah jadi andalan ketika lagi naik daun eh salah naik oven dong mestinya ya... itu tahun 1997 an. Waktu itu belum ada ukuran standard brownies. Makanya aku pakai loyang 22 x 22. Kotak pembungkusnya juga belum ada. Jadi setiap pengiriman pakai kotak mika yang tipis itu. Karena resep yang aku pakai sesuai dengan ukuran loyang, makanya ogah ganti ke ukuran lain. Biarin aja ukuran segitu. Biar Puas makannya... terbukti sampai sekarang masih ada aja yang pesen... Sebagai makanan cadangan di kala gak ada lauk atau lagi males masak. Misalnya dijadiin tambahan makanan ketika makan mie instant &lt;span style="color:#c0c0c0;"&gt;(&lt;em&gt;ups! jangan sering2&lt;/em&gt;!).&lt;/span&gt; Bahkan dijadikan camilan juga ok kok. Apalagi di saat bulan puasa ini, wah jadi andalan banget.&lt;br /&gt;&lt;br /&gt;Komposisi bahan utamanya bisa dituker2 tergantung selera, yang biasa dipadupadankan adalah :&lt;br /&gt;&lt;ul&gt;&lt;li&gt;Kentang &lt;/li&gt;&lt;li&gt;Tempe&lt;/li&gt;&lt;li&gt;Teri Medan&lt;/li&gt;&lt;li&gt;Kacang tanah &lt;span style="color:#999999;"&gt;(&lt;em&gt;pilih yang kecil2&lt;/em&gt;)&lt;/span&gt;&lt;/li&gt;&lt;li&gt;Ikan asin lain yang kecil2 juga misal belibis, dll&lt;/li&gt;&lt;li&gt;Boleh ditambahkan ebi dan bawang goreng ketika sudah matang&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;Cara buatnya juga gampang, seperti kita bikin bumbu balado. Ukurannya kira2 aja ya tergantung dari banyaknya bahan utama yang dipakai. &lt;/p&gt;&lt;ol&gt;&lt;li&gt;Cabe merah yang dihaluskan&lt;/li&gt;&lt;li&gt;Bawang putih &lt;/li&gt;&lt;li&gt;Daun jeruk&lt;/li&gt;&lt;li&gt;Perasan jeruk limo atau asam jawa&lt;/li&gt;&lt;li&gt;gula merah / pasir secukupnya&lt;/li&gt;&lt;li&gt;garam &lt;span style="color:#c0c0c0;"&gt;(&lt;em&gt;hati2 penggunaan garam jika menggunakan ebi)&lt;/em&gt;&lt;/span&gt;&lt;/li&gt;&lt;/ol&gt;&lt;p&gt;&lt;span style="color:#000000;"&gt;Cara buatnya : &lt;/span&gt;&lt;/p&gt;&lt;p&gt;Cabe merah dan bawang putih dihaluskan. Kemudian tumis dengan sedikit minyak goreng. Masukkan daun jeruk, gula merah / pasir, perasan jeruk limo dan garam. koreksi rasa. Baru masukkan campuran bahan utama. Dinginkan. Simpan dalam stoples. &lt;/p&gt;&lt;p&gt;Note : untuk mendapatkan kering kentang yang renyah, rendam parutan kentang dalam air kapur sirih (seujung sendok kapur sirih dilarutkan ke dalam 2 Lt air). Rendam selama 1 jam. Tanya sama si encik yang punya warung, dia nunjukkin sehelai daun yang membungkus ketupat ini : daun simpur. Jangan tanya pohonnya spt apa ya! Bedanya isi dari mie ini isiannya terdiri dari mie, tauge, irisan kentang rebus, mentimun, udang, irisan tahu, disiram dengan kuah kecap dan diberi beberapa emping. Rasanya ? enak dan manis. Tambahkan santan, gula &amp; garam. Aduk rata sampai kering dan dapat dipulung. Ambil 1 sdt adonan, bentuk sebesar kelereng. Selesaikan sampai adonan habis. Sisihkan.&lt;br /&gt;&lt;br /&gt;Kulit :&lt;br /&gt;- Campur kentang bersama tepung beras, tepung gula, garam &amp;amp; vanili, dan santan. Aduk rata&lt;br /&gt;sambil diuleni.&lt;br /&gt;- Ambil sdm adonan kulit &amp;amp; isi dengan adonan isi/kacang hjau ditengahnya. Bentuk bulat.&lt;br /&gt;- Gulirkan di atas wijen. Campur hingga rata. Masukkan kuning telur dan putih telur. Aduk hingga benar-benar tercampur rata&lt;br /&gt;masukkan kacang mete cincang. Aduk hingga semua kacang tercampur rata.&lt;br /&gt;Ambil adonnan dengan menggunakan 2 sendok. Taruh di atas loyang yg sudah disemir mentega. Panggang selama 30 mnt dengan suhu 150 derajat. Angkat. Dinginkan.&lt;br /&gt;&lt;/p&gt;&lt;br /&gt;&lt;br /&gt;&lt;p&gt;Catatan &lt;/p&gt;&lt;br /&gt;&lt;p&gt;Tetap terus mengaduk ketika sedang mencampur telur dan kacang. Memang sepertinya kurang cairan.
